Nexus means weave in latin. For us it means a combination of 35-50 years-old vineyards located on different grounds in different areas.
This peculiar characteristic is then enhanced by a very small quantity of grape produced to improve their ripening.
After the vinification the 80% of the must goes to the stainless steel tanks while the remaining goes to barriques of Allier where it stays on its own yeasts till March. The two parts are then re-assembled.
Best coupled with smoked prosciutto, fish and risotto.
Serve at 12-14°C (53-57°F).
