  • Vinification techniques

    Bunches dried in wooden chests till December, 10th, 2004.
    Grapes softly destemmed and crushed.
    Must filtration via decantation.
    Fermentation achieved by adding selected yeasts.
    Fermentation temperature 18-20°C (64-68°F).
    Maturation in barriques for 12 months, than ageing in glass bottles.
